Easy-Peasy Stuffed Peppers

Ingredients:

  • 100 g rice
  • 2 tbsp olive oil
  • 1 bunch spring onions
  • 2 chopped garlic cloves
  • 1 deseeded chilli
  • 500 g mince beef
  • 8 red bell peppers
  • 1 tsp hot mustard
  • 1 tbsp ketchup
  • 2 beaten eggs 



Cooking temperature:

Gas mark 6



Cooking time:

30 - 40 minuets

Method:

  1. Bring a pan of water to the boil and cook the rice for 10-12 minuets drain it in a sieve and put aside
  2. Preheat the oven to gas mark 6
  3. Carefully heat the oil in a pan and fry the spring onions. add the garlic and chilli and cook for 2 minuets. Stir in the beef and fry for 5 minuets, or until the beef has browned.
  4. Mix the beef with the cooked rice, mustard, ketchup and eggs, and a pinch of salt and pepper.
  5. Wash the peppers, cut a lid from each and remove the seeds.
  6. Place the peppers on a baking tray and fill with mince mixture. Put the lids on and bake in the oven for 30-40 minuets.
